It seems appropriate to share one of my most consistent recipes as my first post, this oatmeal appears on my breakfast rotation so much!
Oatmeal provides a healthy portion of fats, complex carbs, and plant protein — along with iron and Vitamin B. One of the reasons I love oatmeal is the beta glucan soluble fiber leaves you satiated for a while which means you can power through your busy day without feeling hungry for a while. On top of being one of the healthiest breakfast choices, you can modify your bowl however you want!
This is my favorite way to prepare it:

Nutritious Gluten Free Chia Oats
Equipment
- 2 QT Sauce Pan
Ingredients
For the Oatmeal
- ¾ cup water
- ½ cup organic steel cut oats I like Bob's Red Mill Quick Cooking – ready in 7 mins!
- 1 tsp cinnamon ground
- ½ tsp maca powder
- 1 tsp flaxseed whey
- 1 tsp chia seeds
- ½ tsp Lion's mane optional
- 1 piece cacao butter optional
- pinch of himalayan salt
- a splash of your favorite plant based creamer or mylk
For the toppings
- low fructose fruits: handful berries of choice, ½ organic granny smith apple, diced
Instructions
- Pour dry ingredients in boiling water.
- Stir to combine until oats reach desired thickness (~6 mins).
- Add almond butter and creamer or mylk, stir to combine.
- Add toppings.
- Enjoy!
